Old or sprouted onions may seem less appetizing than fresh onions, but they actually have several uses and benefits, so they can be exploited in the kitchen and beyond.

1. Cultivation:
Sprouted onions can be planted to grow new onion plants. Cut the top of the onion, leaving about 2-3 cm of pulp, and plant it in the ground. New shoots will begin to grow which you can then transplant into your garden or pot.

2. Consumption:
Even if old or sprouted onions are no longer suitable for raw consumption, they can still be used for cooking. They can be chopped and used in soups, stews, sauces or dishes cooked enough to neutralize the stronger flavor they develop over time.

Old or sprouted onions can be used to make vegetable broth. Simply put them in water with other vegetables, herbs and spices to make a flavorful broth that can be used as a base for many recipes.
