1 lb large shrimp, peeled and deveined
2 tablespoons olive oil
1 tablespoon jerk seasoning
1 teaspoon garlic powder
1/2 teaspoon ground ginger
Juice of 1 lime
Salt to taste
Wooden or metal skewers
Directions
1. In a large bowl, combine olive oil, jerk seasoning, garlic powder, ground ginger, lime juice, and salt.
2. Add the shrimp to the bowl and toss to ensure they are thoroughly coated with the marinade. Let them marinate in the refrigerator for at least 15 minutes, or up to one hour for more flavor.
3. If using wooden skewers, soak them in water for at least 20 minutes to prevent burning.
4. Preheat your grill to medium-high heat.
5. Thread the marinated shrimp onto the skewers.
6. Grill the skewers for 2-3 minutes on each side, or until the shrimp are pink and cooked through.
7. Serve hot with your choice of sides.
Variations & Tips
For those with different spice level preferences, adjust the amount of jerk seasoning to suit your family's taste. If you're catering to younger palates, you might want to reduce the spice and add a bit more sweetness with honey in the marinade. For an extra zesty flavor, add some finely chopped fresh cilantro to the marinade. Vegetarians in the family? Substitute shrimp with large chunks of portobello mushrooms or tofu, following the same marinating and grilling process.
