1. Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.
2. Roll out your dough on a lightly floured surface into a 12x16 inch rectangle.
3. In a medium bowl, mix together the softened cream cheese, 1/4 cup sugar, lemon zest, and vanilla extract until smooth.
4. Spread the cream cheese mixture evenly over the rolled-out dough, leaving a small margin at the edges.
5. Scatter the blueberries over the cream cheese layer.
6. Roll the dough up tightly from the long side, like a jelly roll, and pinch the seam to seal.
7. Cut the roll into 12 equal slices and place them cut side down in the prepared baking dish.
8. Brush the tops with melted butter and sprinkle with the remaining sugar.
9. Bake for 25-30 minutes, until the rolls are golden brown and the filling is bubbly.
10. Let the rolls cool slightly before serving.
Variations & Tips
For a fun twist, you can add a streusel topping before baking by combining 1/4 cup flour, 1/4 cup brown sugar, and 2 tbsp cold butter until crumbly, then sprinkling over the rolls. If blueberries aren't your favorite, you can easily substitute them with raspberries or chopped strawberries. For those looking to reduce sugar, substitute the sugar in the cream cheese mixture with a suitable sweetener or simply use less.
