My Moroccan friend shared this recipe! It's a keeper!

4 medium beets, peeled and grated
2 tablespoons olive oil
2 tablespoons fresh lemon juice
1 teaspoon ground cumin
1/2 teaspoon cinnamon
1/4 cup chopped fresh mint
1/4 cup chopped fresh parsley
Salt and pepper to taste
1/4 cup feta cheese, crumbled (optional)
1/4 cup chopped walnuts (optional)
Directions
1. Place the grated beets in a large mixing bowl.
2. In a small bowl, whisk together the olive oil, lemon juice, ground cumin, and cinnamon.
3. Pour the dressing over the beets and toss until well coated.
4. Add the chopped mint and parsley to the beets, and toss again.
5. Season with salt and pepper to taste.
6. If using, sprinkle crumbled feta cheese and chopped walnuts over the salad just before serving.
7. Serve chilled or at room temperature.
Variations & Tips
For a lovely twist, you can add some sliced oranges or pomegranate seeds for a fruity punch that complements the earthy beets beautifully. For those who enjoy a bit of spice, a sprinkle of chili flakes can really jazz things up. And if you’re looking to make this salad a little heartier, adding cooked lentils turns it into a more substantial meal.
