Rhubarb cake: A fruity-sour masterpiece of baking art

For the dough:

250 g flour
125g butter, cold and cut into small pieces
100g sugar
1 egg
1 teaspoon Baking powder
A pinch of salt
Optional: vanilla extract or lemon zest for additional flavor
For covering:

500 g rhubarb stalks, peeled and cut into small pieces
100g sugar
1 tbsp corn flour or starch
For the sprinkles:

100g flour
50g sugar
50 g butter, cold and cut into small pieces
Directions:

First preheat the oven to 180 degrees Celsius and grease a baking pan or line it with baking paper.
To make the dough, place the flour, sugar, baking powder and a pinch of salt in a large bowl. Add the cold butter and process with your fingertips or a stand mixer until crumbly.
Add the egg and knead everything into a smooth dough. If necessary, add a little cold water to achieve a smooth consistency. Wrap the dough in cling film and let it rest in the fridge for at least 30 minutes.
While the dough is resting, place the rhubarb pieces in a bowl and mix with the sugar and corn flour. Set aside to let the juice steep.
For the streusel, put the flour, sugar and cold butter in a bowl and use your fingertips to form coarse streusel. Refrigerate.
Take the dough out of the fridge and roll it out on a floured work surface. Line the baking pan with it and form an edge.
Distribute the prepared rhubarb pieces over the dough and smooth them out evenly.
Sprinkle the streusel over the rhubarb and distribute evenly.
Bake the rhubarb cake in the preheated oven for about 40-45 minutes, until the streusel is golden brown and the dough is firm. If necessary, adjust the baking time depending on your oven.
Remove the finished rhubarb cake from the oven and let it cool slightly in the tin before turning it out onto a wire rack to cool completely.
