The second I laid my eyes on this recipe, I knew it was a must-make. My taste buds were in for a delightful surprise, indeed!

4 slices of hearty whole grain bread
1 cup fresh spinach leaves, washed and dried
1/2 cup ricotta cheese
1/4 cup sun-dried tomatoes, chopped
2 tablespoons olive oil or butter
Salt and pepper to taste
Optional: 1 garlic clove, minced (for added flavor)
Directions
1. Heat a skillet over medium heat and add a bit of olive oil or butter to lightly coat the bottom.
2. Spread ricotta cheese evenly on all four slices of bread.
3. On two slices of bread, layer the spinach leaves and sun-dried tomatoes. Sprinkle with a pinch of salt and pepper, and add minced garlic if using.
4. Top with the remaining slices of bread, ricotta side down, to form sandwiches.
5. Place the sandwiches in the skillet. Cook for about 3-4 minutes on each side or until the bread is golden brown and crispy, and the ricotta is warmed through.
6. Carefully remove from skillet, let sit for a minute for easier handling, then cut in half and serve warm.
Variations & Tips
There are plenty of ways to twist this recipe to suit your taste or to use what you have in your pantry. For a bit of a bite, add a sprinkle of red pepper flakes inside the sandwich. If you're a cheese lover, feel free to add slices of mozzarella or provolone for extra gooeyness. For those who enjoy a meaty version, a few slices of prosciutto or crispy bacon would make delicious add-ins.
