2. Wash and peel the vegetables as needed. Cut them into similar-sized pieces so they cook evenly. You can dice them into small cubes or cut them into wedges or slices, depending on your preference.

3. Place the vegetables in a large mixing bowl. Drizzle some olive oil over them and season with salt, pepper, and your choice of herbs and spices. Toss the vegetables gently to coat them evenly with the oil and seasoning.

4. Spread the vegetables in a single layer on a baking sheet or roasting pan. It’s important not to overcrowd the pan, as this can prevent proper browning and crispiness.

5. Place the baking sheet or roasting pan in the preheated oven and roast the vegetables for about 25-35 minutes, or until they are golden brown and tender. Stir or flip the vegetables once or twice during cooking to ensure even browning.
6. Once the vegetables are cooked to your liking, remove them from the oven and let them cool slightly before serving.
Vegetable roasties can be served as a side dish to accompany a main course, or you can enjoy them as a delicious vegetarian or vegan main dish. They are also great for meal prepping and can be reheated later for a quick and healthy meal.
