1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
4 cloves garlic, minced
Juice of 1 lemon
2 tbsp olive oil
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
Zest of 1 lemon
Fresh parsley, chopped for garnish
Directions
1. In a mixing bowl, combine the minced garlic, lemon juice, olive oil, oregano, salt, pepper, and lemon zest.
2. Add the chicken pieces to the bowl and toss to coat thoroughly in the marinade. Let it sit for at least 15 minutes to marinate, though longer is better if you have time!
3. Heat a large skillet over medium-high heat. Once hot, add the marinated chicken in a single layer.
4. Cook for about 5-7 minutes, turning occasionally until the chicken is golden brown and cooked through.
5. Remove from heat and garnish with fresh parsley before serving.
