Instructions:
- Preheat your oven to 400°F and spray a baking sheet with nonstick cooking spray.
- In a medium-sized bowl, stir together the flour, baking powder, salt, and cinnamon.
- In a large bowl, beat together the sugar and melted butter until well combined. Whisk in the applesauce, vanilla, and egg until smooth.
- Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Gently fold in the diced apples.
- Scoop out 1 tablespoon-sized portions of batter onto the prepared baking sheet, spacing them a few inches apart.
- Bake for 10 minutes, then remove from the oven and set the broiler to high.
- To make the glaze, whisk together the powdered sugar and apple juice or cider until smooth and pourable.
- Allow some of the glaze to run down the edges of the heated fritter bites as you brush it over them. Broil, turning the pan often, for 2 to 4 minutes, or until the glaze begins to bubble and caramelize.
- Remove from the oven and generously coat the tops of the fritters with the remaining glaze.
- Allow the glaze to set for 15 minutes before serving. Enjoy!
