Apple Fritter Bites

Instructions:

  1. Preheat your oven to 400°F and spray a baking sheet with nonstick cooking spray.
  2. In a medium-sized bowl, stir together the flour, baking powder, salt, and cinnamon.
  3. In a large bowl, beat together the sugar and melted butter until well combined. Whisk in the applesauce, vanilla, and egg until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Gently fold in the diced apples.
  5. Scoop out 1 tablespoon-sized portions of batter onto the prepared baking sheet, spacing them a few inches apart.
  6. Bake for 10 minutes, then remove from the oven and set the broiler to high.
  7. To make the glaze, whisk together the powdered sugar and apple juice or cider until smooth and pourable.
  8. Allow some of the glaze to run down the edges of the heated fritter bites as you brush it over them. Broil, turning the pan often, for 2 to 4 minutes, or until the glaze begins to bubble and caramelize.
  9. Remove from the oven and generously coat the tops of the fritters with the remaining glaze.
  10. Allow the glaze to set for 15 minutes before serving. Enjoy!
