– 6 medium zucchini
– 1 shallot
– 1 eggplant
– 70 g of parmesan
– 1 small yellow pepper
– 70 g of diced ham
– 1 small red pepper
– 1 sprig of parsley

– 20 g of breadcrumbs

– Extra virgin olive oil

How to make baked zucchini recipe
Preparation

Let’s start by washing the vegetables thoroughly. Cut the zucchini in half and scoop out the insides, making sure to keep the pulp aside.

Let’s continue by peeling the eggplant and roughly chopping its pulp with that of the zucchini.

Wash the peppers, then cut them into small cubes. Mix these vegetables with multiple flavors.
