Instructions:

Prepare the Crust:
In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
Add a pinch of salt and the egg, and mix until well combined.
Gradually add the flour and mix until a dough forms.
Press the dough into the bottom of a lined baking pan (about 8-9 inches in diameter), spreading it evenly. You can use a fork to create a decorative edge if desired.
Prepare the Filling:
In another mixing bowl, cream together the softened butter and sugar until fluffy.
Add the eggs, one at a time, mixing well after each addition.
Stir in the lemon juice, lemon zest, and low-fat milk until combined.
Combine the Dough and Filling:
Sift the flour, baking powder, and baking soda together.
Gradually add the dry ingredients to the wet mixture, mixing gently until a smooth batter forms.
Assemble the Pie:
Pour the filling mixture over the prepared crust in the baking pan, spreading it evenly.
Arrange thinly sliced lemon slices on the surface of the filling.
Sprinkle the top with granulated sugar for added sweetness and a crunchy texture.
Bake the Pie:
Preheat your oven to 180°C (350°F).
Place the assembled pie in the preheated oven and bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Cool and Serve:
Once baked, remove the pie from the oven and allow it to cool in the pan for about 10-15 minutes.
Transfer the pie to a wire rack to cool completely before slicing and serving.
Enjoy!:
Serve slices of lemon pie at room temperature. Optionally, you can garnish with whipped cream or a dusting of powdered sugar.

This lemon pie recipe can indeed be adapted for other citrus fruits like orange or lime, offering a refreshing and tangy dessert option for any occasion. Enjoy baking and delighting your loved ones with this bright and flavorful treat!
