Directions

1. Slice the avocados in half lengthwise and remove the pits. Gently scoop out a bit of the flesh from each half to create a larger cavity for the filling, and set the scooped flesh aside.
2. In a bowl, combine the halved cherry tomatoes, mozzarella balls, and chopped basil. Season with salt and pepper to taste, and drizzle with the extra virgin olive oil.
3. Gently stir the mixture until everything is evenly coated.
4. Spoon the tomato and mozzarella mixture into the avocado halves, filling each cavity generously.
5. Drizzle the filled avocados with balsamic glaze for an extra burst of flavor.
6. Optionally, chop the scooped avocado flesh and mix it in with the filling or save it for another use.

Variations & Tips
