Standing rib roast makes an impressive Christmas main, and it's easier to prepare than you might think! Of course, you can eat this at any time of the year, not just Christmas.
In the recipe below, the roast is rubbed with rosemary and infused with garlic stuffed into small slits all over the roast. Garlic cloves become rich and sweet in the oven — the perfect surprise in every slice.
The roast is impressive all on its own, but consider serving it with a few low-carb sides such as roasted Brussels sprouts, spinach and mushroom salad, or a spaghetti squash gratin.

Ingredients
4-pound standing rib roast
Salt to taste
5 cloves garlic, thinly sliced
1/4 cup Dijon mustard
2 tablespoons butter, melted
