Steps to Make Your Own Yogurt

1. Prepare the Milk: Begin by pouring the milk into a heavy pot. Slowly heat the milk over medium heat. Monitor the temperature with your thermometer. You want to heat the milk to about 180°F (82°C). This high temperature is crucial as it changes the milk proteins, allowing the yogurt to set properly and giving it a thick consistency.

2. Cool the Milk: Once the milk reaches 180°F, remove it from the heat. Let it cool down to about 110°F (43°C). This is the ideal temperature for the cultures to grow.

3. Add the Yogurt Starter: In a small bowl, mix the 2 tablespoons of plain yogurt with a bit of the warm milk. Stir until smooth. This step tempers the yogurt culture, making it easier to mix into the milk without clumps. Then, whisk this mixture back into the pot of warm milk.

4. Incubate: Pour the milk and yogurt mixture into jars or containers. Place these in a warm spot where the temperature can remain steady, around 110°F. You can use an oven with the light on (but the heat off), a yogurt maker, or even wrap the containers in towels in a warm area of your home. Let the yogurt sit undisturbed for about 6-8 hours. The longer it sits, the thicker and tangier it will become.

5. Refrigerate: After the incubation period, place the yogurt in the refrigerator. Chill it for at least 2 hours. This not only cools the yogurt but helps it set further and develop flavor.
