Pecan Pie from an Island

How to Prepare Island Pecan Pie:

  1. Preheat the oven to 300 degrees Fahrenheit (150 degrees Celsius).
  2. In a large bowl, mix together sugar, eggs, cornstarch, flour, and salt until well combined.
  3. Add melted butter to the mixture, then gently fold in pecans, crushed pineapple, and grated coconut.
  4. Place the pie crust in a round baking dish and carefully pour the pecan mixture over it. Press the edges of the crust together.
  5. Place the baking dish in the preheated oven and bake for 55 minutes, or until the pie is almost set.
  6. Cover the pie loosely with aluminum foil and continue baking for an additional 15-20 minutes, or until the center is firm.
  7. Remove the pie from the oven and let it cool completely on a wire rack.
  8. Optionally, decorate with whipped cream and toasted coconut before serving.
