Banana cake without baking, a recipe to fall in love with
- First, place the cookies in a freezer bag and crush them into fine crumbs using a rolling pin. Alternatively, you can use a blender.
- Add the melted butter to the cookie crumbs and mix well until a smooth mixture is formed.
- Pour the biscuit-butter mixture into a springform pan lined with baking paper and spread it evenly over the bottom. Then press down lightly and place in the fridge to set.
- In a bowl, mash the bananas until smooth.
- In a separate bowl, mix the cream cheese, sugar, vanilla sugar and lemon juice until well combined.
- Add the banana mixture to the cream cheese mixture and mix thoroughly.
- In a small bowl, mix the gelatin powder with hot water until completely dissolved. Then slowly add to the banana-cream cheese mixture and stir well.
- Whip the cream until stiff and carefully fold it into the banana-cream cheese mixture until everything is well mixed.
- Pour the banana cream onto the prepared biscuit base in the springform pan and smooth it out.
- Allow the banana cake to set in the refrigerator for at least 4 hours or overnight.
- Garnish with chocolate sprinkles or grated chocolate as desired before serving.
