Prepare the Instant Pot: Turn the Instant Pot to sauté mode. Heat for a few minutes.
Sauté Onions and Beef: Add olive oil and diced onion to the pot. Sauté for 2-3 minutes until onions are translucent. Add ground beef and cook until browned, about 5-7 minutes. Season with Italian seasoning, garlic powder, salt, pepper, and minced garlic. Sauté for an additional 1-2 minutes.
Deglaze the Pot: Remove the beef and onions. Add 3 cups of water and scrape the bottom of the pot to remove browned bits.
Layer Ingredients: Break spaghetti noodles in half and layer them in the pot. Pour spaghetti sauce over the noodles. Optionally, add diced tomatoes. Pour remaining water around the edges to submerge the noodles.
Pressure Cook: Seal the Instant Pot. Pressure cook on high for 5 minutes.
Release Pressure: Allow a natural pressure release for 5 minutes, then quick release the remaining pressure.
Combine and Serve: Stir the mixture until well combined. Serve hot with a fresh salad and garlic toast.
Notes
For a leaner option, substitute ground beef with ground turkey or chicken.
