2. Preserving in olive oil: Inspired by the technique used for pesto, this method involves using olive oil to preserve aromatic herbs. Olive oil is ideal for releasing the aromas and flavours of fresh herbs such as chives or basil. To do this, finely chop the herbs, then place them in a glass jar or jam jar. Add olive oil to completely cover the chopped herbs.

3. Drying herbs: Drying is a classic method for preserving aromatic herbs for long periods of time. Simply place your herbs between two sheets of kitchen paper and put them in the microwave for one minute. Repeat until the herbs are dry and crispy. You can also use the oven to dry the herbs. Spread the herbs on a baking tray covered with baking paper and place them in the oven at 45°C for around 30 minutes, checking them regularly.
4. Freezing Herbs: Freezing is another effective method for preserving herbs. Chop the herbs and mix them with water or oil, then pour them into an ice cube tray and place them in the freezer. Once frozen, transfer the herb cubes to a freezer bag so you can easily use them whenever you need them. By using these simple techniques, you can enjoy the freshness and flavors of your favorite herbs all year long, even when the season doesn’t make them available fresh.
