Instructions:
- Prepare the Watermelon: Cut the watermelon into chunks, removing the seeds and rind.
- Blend: Place the watermelon chunks in a blender or food processor and blend until smooth.
- Cook: Pour the pureed watermelon into a large pot or saucepan. Bring it to a boil over medium-high heat.
- Simmer: Once boiling, reduce the heat to low and let it simmer for 1-2 hours, stirring occasionally, until it thickens to a jam-like consistency.
- Stir Frequently: As the watermelon thickens, stir more frequently to prevent it from sticking to the bottom of the pot.
- Cool: Once thickened, remove the pot from the heat and let the watermelon jam cool completely.
- Store: Transfer the cooled jam into sterilized jars or containers and store them in the refrigerator.
- Enjoy: Use your homemade sugar-free watermelon jam on toast, pancakes, yogurt, or as a topping for desserts!
