Instructions
Prepare the Dough:
In a bowl, activate the yeast by mixing it with warm milk and sugar.
In a separate bowl, combine flour and salt.
Add melted butter, the egg, and the yeast mixture to the flour.
Knead until smooth and elastic, then let it rise for 1 hour.
Prepare the Cheese Filling:
In a bowl, mix together ricotta, feta, parmesan, egg, and parsley (if using).
Season with salt and pepper to taste.
Assemble the Rolls:
Divide the dough into 20-24 pieces.
Flatten each piece and place a spoonful of the cheese mixture in the center.
Seal the edges to form balls and place them seam-side down in a greased pan.
Second Rise:
Allow the rolls to rise for another 30-45 minutes.
Bake the Rolls:
Preheat the oven to 375°F (190°C).
Brush the rolls with melted butter and sprinkle with grated parmesan.
Bake for 20-25 minutes, or until golden brown.
Serve:
Let the rolls cool slightly before enjoying them warm!
