Ingredients:

2 cups finely chopped broccoli
1/2 cup cooked quinoa
1/4 cup almond flour
2 tablespoons nutritional yeast
2 tablespoons finely chopped fresh parsley
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon smoked paprika
Salt and pepper to taste
2 tablespoons flaxseed meal + 6 tablespoons water (for flax eggs)

Instructions:

Prepare the Broccoli: Begin by steaming or boiling the broccoli until it’s tender. Once cooked, drain any excess water and allow the broccoli to cool slightly.
Make Flax Eggs: In a small bowl, combine the flaxseed meal and water. Let it sit for 5-10 minutes until it thickens to an egg-like consistency, creating your vegan “egg” binder.
Combine Ingredients: In a large mixing bowl, combine the cooked broccoli, cooked quinoa, almond flour, nutritional yeast, chopped parsley, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well until all ingredients are evenly distributed.
